At the restaurant’s helm is Peio Donapetry who was trained by Dutournier and Coussau (2 Michelin stars). His motto – aim for excellence based on the seasons with a menu combining both seafood and land-based options, and updated regularly. The chef feels that "The cook is the messenger between the farmer or fisherman and gourmet food lovers."
